Foodie superduo Ryan Levy and Ian Eastveld of The Nice Winery are Certified Sommeliers, wine educators, and Le Cordon Bleu trained chefs. Their hand crafted, boutique wines are poured in top restaurants and have won gold medals in internationally recognized wine competitions. Two of their wines have received 94 point and 92 point ratings from Wine Enthusiast Magazine and the Beverage Testing Institute, and were selected as Top 100 Cellar Selections. Ryan and Ian built their epicurean pedigree first while studying in Paris, France, then directing culinary education for Viking Ranges, teaching cuisine to thousands of students at Central Market, and operating their restaurant and catering companies, Republic and Nuance. They craft 14 award winning varietal wines in Texas, Argentina, and California’s Napa Valley and Paso Robles regions.

Q&A With Ryan Levy & Ian Eastveld

Why do you believe you are the right wine host for this cruise? Share your credentials and passion for wine.

We know wine: Our winemakers, Ryan Levy & Ian Eastveld, have a combined 35 years of experience in the wine and culinary arts world. They have trained in the wine capitols of France and California and currently make wine in Napa, Sonoma, Paso Robles, Washington State, Argentina, and Texas. They are Certified Sommeliers with the Court of Master Sommeliers, trained in winemaking at UC Davis, and are certified by the Society of Wine Educators. Ryan and Ian have taught more than one thousand wine classes on topics ranging from how wine is made to wine appreciation and enjoyment.

We know food: Ryan & Ian are both Chefs trained in classic French techniques at the acclaimed Paris Le Cordon Bleu. They have owned restaurants, helmed cooking schools, and designed wine paired dinners at the winery for thousands of aficionados.

Tell us something special about yourself that would make someone unfamiliar with you want to travel with you on this river cruise?

We know fun: Ryan & Ian have been taking their wine club members on wine adventures in Argentina, Texas and California for a decade. From working the harvest to dining with the regions' most dynamic chefs, Ryan & Ian have the inside track on the art of living well.

What was your “Aha Moment” when you fell in love with wine?

We were students at Le Cordon Bleu in Paris, France, in the summer of 2000, living in a tiny flat above a boulangerie, fromagerie, and small wine shop. After a long day at cooking school we would take a baguette and a glorious hunk of cheese and went to see Claude in the wine shop. He never failed to pair the perfect wine with our afternoon snack, broadening our palates as we learned about each wonderful wine we tasted. Seventeen years and thousands of bottles later, we are delighted to extend the personal service and outstanding wine education we received from Claude to you.

What is one thing you are most looking forward to on your river cruise?

The opportunity to showcase our chef-crafted wines with spectacular cuisine from one of Europe's best kitchens aboard Ama's ship.

What is something fun/unique you wish to share—perhaps something nobody knows until now?

Our wine club members are the most fun-loving group of foodies and wine lovers you will ever meet. A week with them on the river is an opportunity to connect with like-minded people who live life to the fullest!

What is one of the most interesting places you have traveled to and why?

The foodie subculture of Japan is spectacular. Sushi is only the beginning- we were delighted by the depth of Japan's culinary heritage.

If you were stranded on a desert island, and could only have one bottle of wine, what would it be and why?

We are always on the lookout for a wine we haven't tried! Variety is the spice of life, so we would want to try something new and spectacular from a region less traveled. It would also help if at the bottom of the bottle there was a Genie to grant us three wishes, for more bottles of wine!

About the Wine Region – Wachau Valley

Brilliant architectural masterpieces and vine-strung hillsides on the Danube River have inspired artistic creations for hundreds of years. The Romantic Danube journeys through Germany, Austria, Slovakia and Hungary, so you can experience some of the most celebrated wines and sights in Europe’s heartland.

Over 3,700 acres of terraced vineyards rise from Austria’s illustrious Wachau Valley. Located between the towns of Melk and Krems, this cooler-climate wine region brings a wide variety of refreshing, peppery white-grape wines to fruition. Grüner Veltliner is considered to be the most important grape in Austria. Grown in loess soils by the river’s edge, these favored wines offer aromatic stone fruit flavors reminiscent of the terroir. Riesling, the second most popular grape, loves rocky inclines, so it is extensively sewn into the rich hillside. Fruity notes and floral scents surface from these unique whites.
